Chicken Sausage with beer sauced peppers & onions
1 Tbsp. olive oil
2 links of Roasted Red Pepper and Garlic Chicken Sausage (Trader Joe's brand)
1 green bell pepper, sliced
5 cherry tomatoes, quartered
1 clove garlic, minced
1/2 can beer (I used Snapperhead IPA, but anything you're willing to drink would work)
3 Tbsp. ketchup
1 tsp. dried oregano leaves
Salt and Pepper to taste
2 potato hot dog rolls
Drizzle olive oil into a large saute pan. Add sliced onions and peppers and cook for about 3 minutes. Push vegetables to the side and add sausage links to the same pan. Allow sausage to brown on all sides. Add tomatoes (if you don't have fresh, a can of diced tomatoes is great in a pinch) and garlic and cook for another 3-4 minutes. Add beer to the pan and allow to simmer for 3-4 minutes. Add ketchup (tomato paste would work as well) to thicken up the sauce. Finish with oregano, salt and pepper to season allowing to cook for a few minutes more until the sauce has thickened and reduced. Serve on hot dog rolls and enjoy!
This turned a tad messy but nothing a little finger lickin' couldn't clean up. Definitely will be adding this into rotation more often!
